  • 6 Red Potatoes, scrubbed and diced into eights
  • 2 Tbsp Olive oil (extra virgin would be best)
  • 1 clove garlic, minced
  • 1 Tbsp fresh rosemary, chopped
  • Nonstick cooking spray
  • Salt and pepper to taste

Preheat oven to 375*. In large mixing bowl combine red potatoes, oil, garlic, rosemary, salt and pepper. Lightly grease baking sheet with nonstick cooking spray. Transfer potatoes to baking sheet and bake for 30-45 minutes or until potatoes are tender. Serve with desired entrée such as fish, chicken, steak, sandwiches, etc.
